How to Bake a Cake

Baking your own cake from scratch provides you with an opportunity to create a unique product.
It will cost you a whole lot less than a store bought cake and taste much more authentic than a packet mix. It is a lot easier then most people think. It will save you time as well.

Just think, sure it appears quick to duck up to the shops to buy a ready made cake, but if you have to factor in the extra time you invested to earn the money to buy a cake then you have wasted time and are financially behind. Not to mention the prospect of paying for the fuel that is likely going to be spent on travelling to buy this one off item.

It provides you with the option to have far greater control over the finished product and gives you the space to get creative. Making your own cake means you can perfectly tailor the decoration to match the festivities.

This particular cake gave me the chance to use up surplus eggs and to make the most of the Meyer Lemon crop.

Madeira Cake Recipe
200g Softened Butter
200g Castor Sugar
150g Plain Flour
50g Self Raising Flour
4 Eggs
3 teaspoons Milk

Bake at 160 C
In 18cm round pan
For 75min
Checking from 60min on

Icing
30g Butter
80g Softened Cream Cheese
1 teaspoon grated Lemon Rind
1 tablespoon Lemon Juice
1  1/2 cups Icing Mixture
